Fine wine and five-course gastronomy meet at Huvafen Fushi Maldives
Huvafen Fushi Maldives hosted a special Domaines Barons de Rothschild Lafite wine-pairing dinner on Tuesday, 20 October, bringing together French winemaking heritage and a five-course culinary experience featuring seafood, premium meats and dessert.
The evening welcomed Pierre-Antoine Ballan, who guided guests through a selection of wines, sharing insights into their vintages, origins and characteristics while exploring the relationship between food and wine.
For chefs, sommeliers and food and beverage professionals, the event highlighted the importance of pairing wine with culinary preparations, taking into account ingredients, cooking techniques, textures and flavour profiles.
The dinner began with a cured salmon tartlet, served with avocado mousse and salmon roe, paired with NV Taittinger Brut Réserve Champagne from Reims, France.

This was followed by a crab croquette accompanied by saffron aioli, crisp green apple and lemon-chive dressing, paired with a 2023 Chablis from Domaine William Fèvre in Burgundy, France.
The next course featured lobster bisque with lobster tortellini, lobster butter and tomato oil, accompanied by a 2022 Los Vascos Cromas Chardonnay Gran Reserva from Chile’s Colchagua Valley.
For the main course, guests were offered a choice between grilled beef tenderloin and black cod.
The beef tenderloin was served with truffle-infused cauliflower purée, asparagus, black garlic aioli and jus, paired with a 2015 Carruades de Lafite from Château Lafite Rothschild in Pauillac, Bordeaux.

The black cod was presented with dashi beurre blanc, salmon caviar and asparagus, complemented by the 2022 Los Vascos Cromas Chardonnay Gran Reserva.
The dinner concluded with honey and citrus crème brûlée, accompanied by poached apricot, orange zest and a crisp almond tuile. The dessert was paired with a 2020 Carmes de Rieussec from Château Rieussec in Sauternes, Bordeaux.
The menu demonstrated different approaches to food and wine pairing, moving from Champagne and Chablis with the opening seafood courses to Chardonnay, Bordeaux red wine and Sauternes dessert wine.
For the culinary team, the experience required consideration of how ingredients, sauces and cooking methods would interact with the selected wines. The use of seafood, truffle, citrus and chocolate-free dessert preparations provided different flavour profiles around which to structure the pairings.

Ballan’s participation also gave guests an opportunity to learn about the winemaking heritage of Domaines Barons de Rothschild Lafite and the characteristics of individual vintages.
The evening reflected the role of specialist wine dinners in Maldives resort gastronomy, where chefs and sommeliers collaborate to develop menus that bring food and wine together within a structured dining experience.
Through the event, Huvafen Fushi Maldives showcased the contribution of its culinary and beverage teams in delivering wine-led dining, combining technical preparation, wine knowledge and guest interaction.
