Maldives gains global culinary recognition with Carne Diem Grill's 50 Best Discovery listing
Carne Diem Grill by Dharshan has been named to the 50 Best Discovery 2026 collection, becoming the only restaurant in the Maldives to be included in this year's global selection and reinforcing the country's growing reputation as a destination for world-class gastronomy.
For chefs and culinary professionals, the recognition is particularly significant as inclusion in 50 Best Discovery is determined through votes cast by members of the independent 50 Best Academies, comprising more than 3,000 chefs, restaurateurs, food writers, critics and hospitality experts worldwide. Restaurants cannot apply to be listed, making the recognition one based on peer acknowledgement within the global hospitality industry.
The 2026 edition marks the largest expansion of the platform to date, adding more than 650 new venues and bringing the total collection to over 3,500 restaurants, bars, hotels and vineyards across more than 800 cities and towns.
Since opening at The Marina at CROSSROADS Maldives in 2020, Carne Diem Grill has built its identity around a focused culinary philosophy: "Meat. Heat. Salt." Rather than pursuing broad menus or changing trends, the restaurant has concentrated on sourcing premium ingredients and refining the technical precision of live-fire cooking.
Central to that philosophy is Ignis Maximus, Chef Dharshan Munidasa's custom-engineered charcoal grill, designed specifically for Carne Diem Grill. Capable of reaching temperatures of up to 750°C, the grill enables chefs to produce intense caramelisation while preserving the integrity and flavour of high-quality cuts of meat.
For culinary professionals, the grill represents an example of bespoke equipment designed around a specific cooking philosophy rather than adapting techniques to conventional kitchen infrastructure. Its emphasis on high-temperature charcoal cooking reflects a broader movement towards ingredient-led gastronomy, where technique serves to enhance, rather than mask, the natural qualities of the product.
Carne Diem Grill has also extended its live-fire concept beyond the Maldives through pop-up events in Colombo and Bangkok, recreating the restaurant's cooking environment by constructing customised Ignis Maximus grills in each destination. This approach has allowed the team to maintain consistency while demonstrating the portability of its culinary philosophy.
Commenting on the recognition, Chef Dharshan Munidasa said the listing was an honour not only for the restaurant but also for the Maldives as a culinary destination.
“Carne Diem has always been about doing one thing exceptionally well. We have never tried to be another steakhouse. We've remained committed to our philosophy of exceptional ingredients, precision cooking and genuine hospitality,” he said.
The latest recognition also marks another milestone in Chef Dharshan's career. Following the international success of Nihonbashi, the first Sri Lankan restaurant to feature on Asia's 50 Best Restaurants, and Ministry of Crab, which has maintained a presence on Asia's 50 Best rankings and extended list for more than a decade, Carne Diem Grill becomes the third restaurant created by the chef to be recognised by the organisation behind the influential 50 Best rankings.
For the Maldives culinary community, the listing is more than an individual achievement. It demonstrates that restaurants in the destination can earn international recognition by combining technical excellence, a clear culinary identity and consistency, strengthening the Maldives' standing on the global gastronomic stage.
