Atmosphere Kanifushi marks six years of Just Veg Festival with Chef Fabrizio
Atmosphere Kanifushi will celebrate the sixth edition of its Just Veg Festival from 4 to 9 October 2026, bringing together contemporary vegetarian cuisine, ingredient-led cooking and shared dining experiences under the theme "Family Style."
For chefs and culinary professionals, the festival continues to highlight the evolution of plant-forward gastronomy in the Maldives, demonstrating how vegetables, traditional techniques and sustainable ingredients are increasingly shaping modern fine dining.
This year's edition will be led by acclaimed Chef Fabrizio Marino, whose culinary philosophy is rooted in Mediterranean traditions while drawing inspiration from global cuisines. Known for his ingredient-first approach, Chef Fabrizio focuses on simplicity, balance and flavour, using techniques such as fire cooking, fermentation, smoking and citrus preservation to elevate vegetables beyond their traditional supporting role.
Rather than offering conventional plated tasting menus, the 2026 festival adopts a Family Style concept centred on communal dining.
Designed around the idea of sharing, the menus encourage guests to gather around the table and experience dishes intended for collective enjoyment, reflecting a broader shift in contemporary gastronomy towards conviviality and meaningful dining experiences.
“Fine dining is changing,” Chef Fabrizio said.
“Today's guests are searching for something more meaningful than complexity. They want authenticity, generosity and experiences that bring people together.”
The festival menu combines Mediterranean influences with flavours of the Indian Ocean, showcasing seasonal produce through a range of cooking techniques. Highlights include shared antipasti, fire- and smoke-inspired dishes, regionally influenced vegetarian creations and desserts presented for communal dining.
For culinary professionals, the programme illustrates how classical techniques commonly associated with meat and seafood are increasingly being adapted for vegetables, creating depth, texture and complexity while supporting more sustainable menu development.
Over the past six years, Just Veg has become one of the Maldives' most recognised vegetarian culinary events, reinforcing Atmosphere Kanifushi's position as an early advocate of dedicated plant-based fine dining within the destination's luxury resort sector.
The festival also reflects wider international dining trends, where ingredient provenance, sustainability and reduced reliance on animal proteins continue to influence menu design across leading restaurants.
General Manager Ram Bhoyroo said the anniversary edition reinforces the resort's commitment to innovative and immersive gastronomy.
