InterContinental Maldives to spotlight sustainable seafood with Ocean to Table dining experience
InterContinental Maldives Maamunagau Resort has unveiled a week-long programme combining marine conservation, sustainability and ocean-inspired gastronomy in celebration of World Reef Awareness Day, World Environment Day and World Oceans Day.
For chefs and hospitality professionals, the programme highlights the increasing integration of sustainable seafood sourcing, environmental education and conservation-led dining within Maldives resort operations.
A key culinary feature of the programme will be the Ocean to Table dining experience curated by Chef Arun at the resort’s overwater Mediterranean restaurant, The Lighthouse. The dining experience will focus on responsibly sourced seafood and island-inspired flavours, reflecting the importance of sustainable ingredient sourcing within contemporary luxury hospitality.
Set against panoramic views of the Indian Ocean, the menu will showcase seasonal ingredients and ocean-inspired dishes designed to celebrate both Maldivian marine life and environmentally conscious culinary practices.
The initiative aligns with a wider industry movement in the Maldives, where resorts are increasingly linking food and beverage programming with sustainability messaging and marine conservation awareness.
Alongside The Lighthouse experience, the resort will continue to offer its broader culinary portfolio, including seafood-focused dining at The Fish Market, all-day dining at Café Umi, casual dining at The Collective, and beverage experiences at the Sunset Bar and Wine Cellar.
The conservation-themed programme has been developed in collaboration with The Manta Trust and Ocean Group, combining educational activities, environmental initiatives and guest engagement experiences throughout the first week of June.
Families and younger guests will participate in ocean-themed workshops, cookie decorating sessions and marine-inspired activities through Planet Trekkers kids’ club. Interactive activities include marine animal sandcastle building, island-wide treasure hunts and educational screenings inspired by ocean conservation themes.
The programme will also include a Coral Restoration Workshop, offering guests insight into reef preservation efforts and the restoration work carried out in Maldivian waters. Guests will additionally be invited to participate in lagoon clean-up activities as part of the resort’s sustainability initiatives.
Wellness experiences will also be integrated into the celebrations through AVI Spa’s Ocean Bliss Ritual, a 90-minute treatment inspired by the Indian Ocean and featuring sea salt scrubs and seaweed clay wraps.
The week will conclude with an educational discussion hosted by Ocean Group on sustainable fishing practices, alongside a commemorative cake-cutting ceremony with The Manta Trust to reinforce awareness of marine conservation and environmental stewardship.
Through initiatives combining gastronomy, conservation and guest education, InterContinental Maldives continues to position sustainability as an integrated element of its culinary and hospitality programming.
