Pink Burgers!

The reason that homemade beef burgers should never be served pink is to prevent any risk of E.coli. The E.coli bacteria is found on the outside of the meat, so serving a rare steak is fine as you will have seared the edges which effectively reduces the bacteria to a safe level. With burgers you mince the meat which allows the bacterium to move to the middle of the burger, so if you cook it pink, then insufficient heat reach the core so the bacteria can survive making your diner sick. Also it is worth remembering that unlike other bacteria, only a few E.coli bacterium are required to cause food poisoning! Don’t risk it, cook it!
