THE OZEN COLLECTION marks Diwali with traditional Indian dining at two resorts

THE OZEN COLLECTION will celebrate Diwali with specially curated Indian thalis, traditional festive sweets and live chaat preparations at OZEN LIFE MAADHOO and OZEN RESERVE BOLIFUSHI on 8 and 9 November 2026.

The culinary programmes will highlight regional Indian flavours and cooking traditions, with both resorts presenting dining experiences inspired by the Festival of Lights.

For chefs and food and beverage professionals, the celebrations will showcase different approaches to Indian cuisine, from traditional thali presentations to contemporary interpretations and interactive street food preparations.

Traditional Indian thali at OZEN LIFE MAADHOO

At OZEN LIFE MAADHOO, the Diwali celebrations will take place on 8 November at TRADITION INDOCEYLON, the resort’s overwater restaurant specialising in Indian and Sri Lankan cuisine.

From 7 pm to 10.30 pm, guests will be served an exclusive thali inspired by India’s diverse culinary heritage, accompanied by traditional Diwali sweets.

The thali format brings together several preparations within a single meal, allowing chefs to present contrasting flavours, textures and regional influences.

For culinary teams, preparing a thali requires attention to the balance between individual components, particularly the relationship between spices, acidity, richness and accompanying dishes.

Traditional sweets will provide the dessert component of the experience, highlighting the role of confectionery and pastry in Indian festive celebrations.

The restaurant will also feature lanterns, floral decorations and festive lighting to complement the dining experience.

Live chaat and contemporary Indian cuisine at OZEN RESERVE BOLIFUSHI

At OZEN RESERVE BOLIFUSHI, SAFFRON will host The Festival of Lights on 8 and 9 November, from 7 pm to 10.30 pm.

The restaurant will present specially curated vegetarian and non-vegetarian Diwali thalis, incorporating contemporary interpretations of traditional Indian dishes.

One of the principal culinary features will be a live chaat counter, where Dahi Bhalla and Aloo Tikki will be prepared to order.

Dahi Bhalla, traditionally made with lentil dumplings served with yoghurt and accompanying seasonings, highlights the balance of creamy, tangy and spiced flavours associated with Indian chaat.

Aloo Tikki, a spiced potato preparation, offers another example of Indian street food, with its crisp exterior and soft centre providing contrasting textures.

For chefs, live chaat stations provide an opportunity to demonstrate preparation and assembly techniques while engaging directly with guests.

The format also allows individual components to be combined close to service, helping maintain the textures and flavour balance central to chaat.

The evening will begin with a festive welcome drink, while musical performances will accompany the dining experience.

Culinary heritage at the centre of Diwali

Across both resorts, thali dining will serve as the principal expression of the Festival of Lights, bringing together different dishes in a format associated with sharing and celebration.

The programmes will also highlight the role of traditional sweets and regional specialities in Indian festive cuisine.

For resort culinary teams, cultural celebrations such as Diwali provide opportunities to showcase regional cooking traditions while introducing international guests to their ingredients, preparation methods and culinary significance.

The experiences will be included within the resorts’ respective all-inclusive plans: the INDULGENCE Plan at OZEN LIFE MAADHOO and the RESERVE Plan at OZEN RESERVE BOLIFUSHI.

Through the Diwali dining programmes, THE OZEN COLLECTION will bring Indian culinary heritage into the Maldives resort experience, with thalis, live chaat preparations and festive sweets forming the centrepiece of the celebrations.
