80 grams Egg Yolk
120 grams Egg White
125 grams Caster Sugar
125 grams 64% Veliche Chocolate
200 grams Whipped Cream
1 tbsp Icing sugar
75 grams cream cheese
Black berry Jam

PREPARATION

-Whisk the egg yolk and caster sugar until pale and fluffy.

-Mix in the melted chocolate.

-Whisk the egg white and fold in to the chocolate mixture.

-Spread thinly on a tray. Bake for 15 mins at 160c.

-Whip the cream and icing sugar until soft peaks. Mix with the cream cheese.

-Spread the filling on the cake evenly.

-Roll in slowly but firmly. Chill for 2 hours before serving.
