Niva Velassaru culinary team exchanges pizza-making expertise with Chef Andrea Ena

Niva Velassaru recently welcomed Italian pizzaiolo and chef Andrea Ena for a two-day culinary collaboration that combined professional knowledge exchange with a live dining experience for resort guests.

The collaboration gave members of Niva Velassaru’s culinary team an opportunity to work alongside Ena, learning from his approach to pizza-making while exchanging ideas on ingredients, techniques and presentation. The programme culminated in a special pizza experience at Vela, where guests were introduced to a menu created specifically for the collaboration.

Other pizzas presented during the event drew more directly from Ena’s signature flavour combinations, featuring ingredients including burrata, semi-dried tomatoes, Parma ham, artichokes and Parmesan.

These ingredients allowed the menu to explore different dimensions of Italian pizza-making, from the creaminess of burrata and concentrated sweetness of semi-dried tomatoes to the savoury character of cured ham and Parmesan.

The dining experience concluded with tiramisu, retaining an Italian theme through dessert and completing the menu with one of the country’s best-known classics.
