Four-hands dinner, Omakase and Yakitori BBQ lead Alila Kothaifaru Maldives festive dining
Alila Kothaifaru Maldives will bring together chef collaborations, Japanese dining, Maldivian cuisine and festive gala experiences as part of its “Tides of Wonder” programme, beginning on 21 December 2026 and continuing through Orthodox Christmas on 7 January 2027.
The culinary programme will feature a Four-Hands Dinner by Executive Chef Frank Wackerhagen and Chef Mumu, alongside Ten Tides Omakase, Yakitori BBQ Night 3.0, Maldivian dining at Alila Spice Garden and Christmas and New Year celebrations.
For chefs and food and beverage professionals, the festive calendar presents a range of culinary formats, from collaborative multi-course dining and Japanese cooking techniques to traditional island flavours and large-scale celebratory service.

Four-Hands Dinner brings chefs together
One of the principal culinary highlights will take place on Christmas Day at Pibati Sul Mare, where Executive Chef Frank Wackerhagen will collaborate with Chef Mumu for a special Four-Hands Dinner.
The experience will bring together two chefs in a shared culinary presentation, creating an opportunity to exchange techniques, ideas and approaches to menu development.
Four-hands dinners require close coordination between participating chefs and the resident kitchen brigade, particularly around ingredient sourcing, preparation, plating and service timing. The format also allows guests to experience different culinary perspectives within a single dining occasion.
Christmas Eve, meanwhile, will feature a festive dinner at Seasalt, accompanied by live entertainment.
“For us, the season is about giving each table its own character,” said Wackerhagen. “Some evenings are celebratory, others relaxed and close to the island, but each begins with good ingredients, a sense of place and the pleasure of sharing.”

Japanese techniques and Maldivian flavours
Japanese cuisine will be another focus of the festive programme through Ten Tides Omakase and Yakitori BBQ Night 3.0.
Omakase dining places menu selection in the hands of the chef, with the progression of dishes guided by ingredient quality, seasonality and technique. The format allows chefs to demonstrate precision in preparation and presentation while offering a more personalised dining experience.
Yakitori BBQ Night 3.0 will bring a different expression of Japanese cooking to the resort, with grilling techniques taking centre stage.
The programme will also feature Maldivian dining at Alila Spice Garden, introducing local culinary traditions alongside the resort’s international dining experiences.
For the culinary team, presenting Maldivian cuisine provides an opportunity to highlight ingredients and flavour combinations associated with island cooking, including tuna, coconut, chilli and spices, while connecting the festive programme with the destination’s food culture.

Gala dining and New Year celebrations
On 31 December, the celebrations will begin with beachfront cocktails before guests gather for the New Year’s Eve Gala Dinner.
Live performances, a mentalist and music by DJ Ossanna will accompany the evening, culminating in the countdown to 2027.
The culinary programme will continue into the New Year with further dining and beverage experiences, including the New Year Flair Sundowner at The Shack.
The festive season will conclude on 7 January with Orthodox Christmas dining and a White Beach Party at Mirus Beach.
For the resort’s culinary and beverage teams, the programme will require coordination across different dining formats, from intimate chef-led experiences to festive dinners, cocktail events and larger celebrations.

Dining experiences shaped by the island
Beyond gastronomy, “Tides of Wonder” will include marine discovery activities, Maldivian traditions, wellness experiences and family programmes.
Two Marine Discovery Quiz Nights, hosted by the resort’s resident marine biologist at Mirus Bar, will also connect guests with the surrounding ocean environment.
Thomas Weber, General Manager of Alila Kothaifaru Maldives, said the programme was designed to encourage guests to experience the festive season at a more relaxed pace.
“Tides of Wonder is an invitation to experience the festive season at a different pace,” he said. “A longer stay gives guests the freedom to enjoy the celebrations without rushing from one occasion to the next, leaving time for the unexpected moments that often become the most memorable.”

Danilo Paolella, Director of Food & Beverage, said variety would remain central to the resort’s dining approach.
“There is always another table to discover, another sunset to share and another reason to stay a little longer,” he said.
From the Four-Hands Dinner at Pibati Sul Mare to omakase, yakitori, Maldivian dining and festive gala celebrations, Alila Kothaifaru will use its culinary programme to offer different dining experiences throughout Christmas, New Year and Orthodox Christmas.
The programme will also provide the resort’s chefs and F&B professionals with opportunities to showcase different culinary techniques, service styles and approaches to dining within a single festive season.
