Sun Siyam Iru Fushi culinary experience: 15 restaurants, 66 wines and 24-hour dining

Sun Siyam Iru Fushi has expanded its food and beverage offering with a new 24-Hour Premium All-Inclusive Dine Around programme, giving guests access to a culinary portfolio spanning 15 restaurants and bars alongside a collection of 66 wines, Champagne and personalised dining experiences.

The programme forms part of a wider approach at the resort to include more dining, cultural and lifestyle experiences within the guest stay.

For chefs and food and beverage professionals, the scale of the dine-around concept is notable. Operating across 15 outlets requires careful menu differentiation, purchasing, production planning and coordination to ensure that guests experience variety without compromising consistency across the resort.

The beverage component includes 66 wines from international producers, supported by fine Champagne inclusions and sommelier-led tastings available to guests staying in selected accommodation categories.

Such a programme places considerable emphasis on cellar management and service knowledge. Sommeliers and restaurant teams need to understand individual wine styles, serving temperatures and appropriate food pairings while maintaining stock across several venues.

Food and drink are also integrated into the resort’s villa experiences. Guests staying in Sunset Horizon Water Villas with Pool receive chef-curated apéritifs served in private sunken lounges, while The Retreats include floating breakfasts and sommelier-led tastings.

These formats take culinary service beyond the restaurant and into private spaces, requiring additional coordination around timing, transport and presentation.

Maldivian flavours also appear within the resort’s broader cultural programme. Through the weekly Maldivian Roots experience, guests can grind island spices and engage with local traditions, while evening Turndown Journeys incorporate local delicacies alongside folklore and handcrafted keepsakes.

For culinary teams, such activities provide a way to introduce guests to ingredients and flavours associated with Maldivian food culture outside conventional restaurant service.

Daily frozen treats at La Cremeria add another element to the resort’s inclusive dining offer, particularly for families, while children under 15 staying with two adults receive complimentary dining.

Celebrations are supported by the pastry team through bespoke artisanal cakes for birthdays and anniversaries. Honeymoon experiences extend into private candlelit dining, while personalised turn-down amenities add smaller food-led touches to special occasions.

The expanded programme illustrates the broad role food and beverage plays in the resort’s wider hospitality model. Beyond breakfast, lunch and dinner, the operation now encompasses wine education, private dining, villa service, frozen desserts, celebration cakes, local delicacies and cultural food experiences.

For Sun Siyam Iru Fushi’s chefs, pastry teams, sommeliers and service professionals, the 24-hour concept places culinary delivery at the centre of the guest journey — from a private floating breakfast in the morning to a wine tasting, island-wide dining and late-night service.
