Lobster BBQs, Thai street food and seafood feasts lead Dusit’s Maldives festive season

Dusit Hotels and Resorts will place seafood, Thai cuisine, beachfront barbecues and gala dining at the centre of its 2026 festive programmes at Dusit Thani Maldives and dusitD2 Feydhoo Maldives.

The two resorts will present separate ocean-inspired celebrations: Ocean Carnival at Dusit Thani Maldives in Baa Atoll and Reef & Rhythm at dusitD2 Feydhoo Maldives near Malé.

For chefs and food and beverage professionals, the programmes span several service formats, including lobster barbecue, Thai street food, Christmas set dining, seafood and Champagne experiences, international gala buffets and large-scale beachfront events.

Lobster BBQ and Thai street food at Dusit Thani Maldives

Dusit Thani Maldives will begin its festive programme on 21 December with a Christmas tree lighting at Sand Bar.

Among the principal culinary events will be a beachfront Lobster BBQ, bringing premium seafood into a live outdoor cooking format.

For resort culinary teams, lobster barbecue service requires careful attention to timing and temperature. The shellfish needs sufficient heat to develop flavour while avoiding overcooking, with grill management particularly important during high-volume beachfront service.

Christmas Day will feature a Christmas Family Set Dinner at Sea Grill, shifting the operation from informal outdoor cooking to a more structured dining format.

Later in the festive period, the resort’s Jungle Night at Coconut Grove will combine BBQ dining with entertainment and Maldivian Boduberu.

The main operational peak will come on 31 December with the Ocean Carnival New Year’s Eve Gala Dinner & Party at Market Beach.

The evening will begin with a cocktail reception before moving into a gala buffet accompanied by live entertainment and a midnight fireworks display.

For kitchen teams, New Year gala buffets demand extensive advance production and close coordination between hot kitchen, cold kitchen, pastry, stewarding and service teams. Replenishment also needs to be carefully controlled so dishes remain fresh and properly presented throughout the evening.

The culinary programme will continue into January with an authentic Thai Street Food Market at Benjarong on 3 January, accompanied by traditional Thai dance.

For Dusit, the event provides a direct link to the group’s Thai heritage, while giving chefs an opportunity to present dishes through the more informal and interactive format associated with street food.

Seafood, Champagne and Thai flavours at dusitD2 Feydhoo

At dusitD2 Feydhoo Maldives, the festive programme begins on 10 December with a Christmas Cocktail Soirée and tree lighting at SOI Beach.

Christmas Eve will feature a beachfront festive feast at Baraveli, followed by live entertainment and an LED party.

Food remains a recurring element across the wider Reef & Rhythm programme, including Streets of Thailand and Seafood, Sax & Champagne.

The latter will combine fresh seafood, Champagne and live saxophone music in a beach setting.

For sommeliers and culinary teams, seafood and sparkling wine provide a natural pairing opportunity. Champagne’s acidity and effervescence can work particularly well with shellfish and richer seafood preparations, while sauces, seasoning and cooking methods still need to be considered when selecting individual styles.

The Streets of Thailand concept offers another platform for Thai flavours, likely requiring fast, freshly prepared dishes suited to a more informal service environment.

Such formats place emphasis on mise en place, speed and consistency, particularly where chefs are cooking or finishing dishes in view of guests.

Gala dining to welcome 2027

New Year’s Eve will provide the principal festive dining event at both resorts.

At dusitD2 Feydhoo Maldives, SOI Beach will host the Reef & Rhythm New Year’s Eve Gala, beginning with a sunset saxophone performance before an international gala, stage entertainment and the countdown to 2027.

For food and beverage teams, these large events require dining to operate in close coordination with entertainment schedules.

Service timing, buffet replenishment, beverage flow and dessert presentation all need to align with performances and the countdown, making communication across departments particularly important.

The two festive programmes also demonstrate different culinary identities within the same hotel group.

Dusit Thani Maldives combines lobster barbecue, set dining, gala buffet and Thai street food within a more nature-led Baa Atoll setting.

dusitD2 Feydhoo places greater emphasis on social beachfront dining, seafood, Champagne and Thai-inspired experiences alongside music and nightlife.

Across both properties, food and beverage will form a central part of the Christmas and New Year calendar, giving chefs, bartenders and service teams a broad programme ranging from live-fire seafood and Thai street food to Champagne pairings and large-scale gala dining.
