Mud crab 2 nos cleaned
Blue swimmer crab 2 nos cleaned
Oyster sauce 500ml
Curry leaves 10-15 nos
Ginger Julian 30g
Onion diced 2 nos
Garlic dried 10 cloves
Vegetable oil for frying
Black pepper 2tbsp

Method

Heat oil in a thick bottom pan, add onion, garlic, curry leaves, ginger and cook for 4 – 5 minutes without colour. Add oyster sauce, stock pepper and bring to boil. Reduce the heat and simmer for 15-20 minutes.Season the crab with salt pepper and lime juice, , sear the crab on a hot grill or pre heated pan and transfer to baking tray, cover the crab with the pepper sauce add 1tbsp of butter and hint of lime , cook inside the preheated oven for 20 minutes .serve with fried curry leaves , coriander leaves and tomato dice
