Michelin-starred Chef Tristan Brandt returns to Sirru Fen Fushi for festive dining series
Sirru Fen Fushi – Private Lagoon Resort will place gastronomy at the centre of its 2026 festive programme, with Michelin-starred Chef Tristan Brandt returning to the island for two exclusive dinners alongside gala buffets, Japanese dining, Mediterranean seafood and a series of culinary experiences across the resort.
Running from 23 December 2026 to 7 January 2027, the resort’s festive programme, titled A Constellation of Moments, brings together dining, entertainment, wellness and marine experiences under the theme Ocean by Day, Stars by Night.
For chefs and food and beverage professionals, the culinary highlight will be the return of Chef Tristan Brandt, who will host two exclusive dinners during the festive period.
Brandt is known for a contemporary approach that places strong emphasis on ingredient quality, precision and detailed presentation. At Sirru Fen Fushi, his menus will be designed around selected ingredients and refined techniques, adding a chef-led fine-dining component to the resort’s wider festive calendar.
His return also reflects the growing role of visiting-chef residencies and culinary collaborations within the Maldives resort sector. Such programmes allow resort kitchens to introduce guests to different culinary philosophies while also creating opportunities for resident teams to work alongside chefs with international restaurant experience.

The two dinners will form part of a broader food and beverage programme spanning several of Sirru Fen Fushi’s restaurants.
At Raha Market, the resort will stage festive buffets and gala dinners throughout the season. These large-scale services will form a central part of the Christmas, New Year and Orthodox Christmas celebrations, requiring close coordination across culinary, pastry, stewarding and restaurant teams.
Festive buffets remain among the most operationally demanding formats for resort kitchens. Beyond the volume of food required, teams must manage menu variety, live preparation, temperature control, replenishment, presentation and service over an extended period.
At the same time, festive buffets give chefs considerable scope to work across multiple cuisines and stations, allowing guests to move through seafood, grills, salads, desserts and other categories while interacting more directly with culinary teams.
Sirru Fen Fushi’s Japanese restaurant, Kata, will offer a different style of festive dining. Its refined Japanese cuisine will be accompanied by live acoustic performances, combining food and entertainment in a more intimate setting.
Japanese cooking places particular emphasis on ingredient handling, knife skills, seasoning and presentation. Within a resort environment, the cuisine also provides opportunities for chefs to work extensively with seafood, rice, broths, grilled preparations and raw applications, depending on the menu.
The addition of live acoustic music is intended to complement the dining experience rather than function as a separate event, creating a slower and more structured evening around the restaurant’s culinary identity.

At Azure, the focus will turn to Mediterranean-inspired seafood served in an overwater setting. The restaurant’s concept gives the culinary team the opportunity to work with fish and shellfish through preparations that draw on Mediterranean flavours and techniques.
For chefs, seafood-led menus often demand particular attention to sourcing, freshness and timing. Preparation methods such as grilling, roasting, curing and light sauce work can allow the principal ingredient to remain central while still giving the kitchen room to build depth through herbs, citrus, olive oil, vegetables and other accompaniments.
Across the festive season, these individual restaurant identities will operate alongside the resort’s larger celebrations.
The programme opens on 23 December with an Opening Night and Tree Lighting Ceremony, followed by Christmas Eve and Christmas Day events. A family-focused Pirates of Sirru celebration will also form part of the schedule before the programme builds towards the New Year’s Eve gala.
The festivities will continue into early January with Orthodox Christmas celebrations before concluding with a Closing Night on 7 January.

Dining will be integrated with the entertainment programme throughout. A resident group of international musicians, dancers, acrobats and fire performers will appear across sunset gatherings, dinners and evening events.
For food and beverage teams, this type of event programming requires additional coordination between kitchen, service and entertainment operations. Timing becomes particularly important, as courses, buffet openings and service sequences often need to align with performances, speeches or other programmed elements.
Sirru Fen Fushi is also using the festive period to extend the guest experience beyond the restaurants.
Sunset gatherings with live music will take place throughout the programme, while after-dinner entertainment will continue on the beach. Guests will also be able to participate in the Constellation Academy, which will offer private and small-group masterclasses in music, dance and performance.
The wider programme includes wellness experiences led by holistic practitioner Dr Doshi, who will return for a residency at Arufen Spa. Guests will have access to personalised consultations, holistic therapies and mindfulness sessions during the festive period.
Marine and island experiences will include Turtle Research excursions, guided visits to the resort’s Coralarium, sunset dolphin cruises, handline fishing and snorkelling along Sirru Fen Fushi’s nine-kilometre house reef.
The resort’s private Azimut Yacht will also be available for customised excursions ranging from Champagne sunset cruises to half-day and full-day voyages exploring reefs and sandbanks.

For the culinary team, the festive season therefore sits within a wider programme where food is one of several ways in which guests engage with the island. Destination, setting and entertainment become part of the dining experience alongside the menu itself.

Sirru Fen Fushi has 120 beach, jungle and overwater villas and is surrounded by one of the Maldives’ largest private lagoons. Its dining portfolio is complemented by the Coralarium, the Maldives’ first underwater art installation and coral regeneration project.
For the resort’s culinary and food and beverage teams, the 2026 festive programme will range from high-volume gala service at Raha Market to Japanese dining at Kata, Mediterranean seafood at Azure and the two guest-chef dinners by Tristan Brandt.
The combination demonstrates how festive programming in the Maldives increasingly extends beyond a single Christmas or New Year’s Eve menu. Instead, resorts are building multi-day culinary calendars incorporating visiting chefs, restaurant-specific concepts, gala service, entertainment and destination dining.
At Sirru Fen Fushi, that approach will place both the resident culinary team and visiting talent at the centre of the guest experience throughout the Christmas and New Year period.
