Michelin-starred Chef Pascal Steffen to collaborate with The Halcyon Private Isles Maldives

The Halcyon Private Isles Maldives has announced an exclusive culinary residency with Swiss Michelin-starred chef Pascal Steffen, Executive Chef and Co-Owner of roots Basel, from 1 to 7 October 2026.

The collaboration will see Steffen work alongside the resort’s culinary team to develop a series of exclusive menus and signature dishes inspired by Maldivian ingredients, local produce and the natural resources of the Indian Ocean.

Awarded two Michelin stars and 18 GaultMillau points, Steffen has built an international reputation for his ingredient-driven approach to cuisine, placing vegetables at the centre of the plate while using carefully sourced seafood and meat to complement each dish.

For culinary professionals in the Maldives, the residency offers an opportunity to observe how one of Switzerland’s leading chefs interprets local ingredients through a contemporary fine-dining lens.

Focus on local produce and island ingredients

According to the resort, the collaboration aligns closely with The Halcyon’s culinary philosophy, which emphasises fresh seafood, produce harvested from the resort’s Traveller’s Garden, and ingredients sourced from the Maldives.

Throughout the residency, Steffen and the resort’s chefs will create dishes for the resort’s dining venues, including Thari, Yuzu and Firepit, drawing inspiration from the flavours and products available in the island environment.

The residency reflects a growing trend within the luxury hospitality sector, where visiting chef collaborations are increasingly being used to introduce new culinary perspectives while strengthening the skills and creativity of in-house teams.

Knowledge exchange and long-term impact

Beyond guest dining experiences, the residency is expected to focus on culinary exchange and menu development. The chefs will work together to create new dishes during the week-long programme, with selected creations set to remain on the resort’s menus after the residency concludes.

In an unusual extension of the partnership, roots Basel will also introduce a collaborative signature dish before the residency begins, giving diners in Switzerland an early preview of the culinary relationship between the restaurant and the Maldivian resort.

Commenting on the collaboration, Steffen said the opportunity to work in the Maldives would provide access to a completely different range of ingredients and culinary influences.

“We’re excited to discover an entirely new world of ingredients that will broaden our culinary perspective in such an extraordinary setting. Encounters like these inspire us just as much as they inspire our guests,” he said.
